Description

Classic Beef Stroganoff brings Russian culinary tradition to modern kitchens with rich, creamy sauce and tender meat. Hearty comfort blends elegantly, inviting diners to savor each luxurious, comforting bite.

Ingredients

Scale
  • 1 lb (450 g) ribeye steak, trimmed and sliced into strips
  • 8 oz (225 g) white button mushrooms, quartered
  • 7 oz (200 g) shiitake mushrooms, stems removed and caps sliced
  • 10 oz (280 g) medium egg noodles
  • 1½ cups beef broth
  • 1 medium yellow onion, thinly sliced
  • ½ cup dry white wine
  • 3 tbsps unsalted butter
  • 2 tbsps butter
  • ¾ cup sour cream
  • 2 tbsps all-purpose flour
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 garlic clove, minced
  • ½ cup fresh parsley, chopped
  • 1 tbsp fresh chives, chopped, plus extra for garnish
  • salt and freshly ground black pepper, to taste

Instructions

  1. Noodle Preparation: Boil salted water and cook egg noodles until tender. Drain and toss with melted butter, parsley, and chives. Transfer to a warm plate.
  2. Beef Searing: Season beef strips with salt and pepper. Heat vegetable oil in a skillet over medium-high heat. Sear beef quickly for 30-45 seconds per side until golden-brown. Remove and set aside.
  3. Vegetable Sauté: In the same skillet, melt butter and sauté onions until translucent. Add mushrooms and thyme, cooking until mushrooms develop crisp edges. Briefly sauté minced garlic to release aromatics.
  4. Sauce Creation: Deglaze pan with white wine, reduce, and sprinkle flour to create a roux. Incorporate sour cream, Dijon mustard, Worcestershire sauce, and black pepper. Gradually whisk in beef broth, simmering until sauce reaches a luxurious, velvety consistency.
  5. Final Assembly: Return seared beef to the sauce, warming gently. Plate noodles, top with beef and creamy sauce, and garnish with fresh chives for a sophisticated finish.

Notes

  • Quick-Sear Secret: Brown the beef rapidly over high heat to lock in juices and create a delicious golden crust without overcooking the meat.
  • Mushroom Magic: Allow mushrooms to develop crisp edges by avoiding overcrowding the pan, which helps concentrate their rich, earthy flavor.
  • Sauce Smoothing Technique: Whisk continuously when adding broth to prevent lumps and achieve a silky, restaurant-quality sauce consistency.
  • Temperature Control: Maintain medium-low heat when reintroducing beef to the sauce to prevent toughening and preserve the meat’s tender texture.
