Ingredients
Scale
- 1.5 pounds (680 g) ground sirloin
- 2 large eggs (beaten)
- 11 oz (311 g) can of diced tomatoes & green chiles
- 1.5 cups (340 g) sharp cheddar cheese (shredded)
- 4 flour tortillas (10 or 12 inches)
- 2 tbsps (30 g) butter (plus more for greasing the pan)
- 0.5 cups (60 g) tortilla chip crumbs
- 0.5 cup (75 g) diced onion
- 1 large thinly sliced onion
- 2 cloves garlic (minced)
- 1 ripe Hass avocado (cubed)
- 1 tbsp (15 ml) olive oil
- 1 tsp chile powder
- Crushed oregano leaves, preferably Mexican
- Coarse salt and fresh black pepper to taste
- Sour cream for serving (optional)
- Fresh chopped cilantro or parsley (optional)
Instructions
- Preparation: Preheat oven to 400°F (204°C). Line baking sheet with foil and lightly grease with butter.
- Meat Mixture: In a large bowl, combine ground sirloin, onions, garlic, tomatoes, tortilla crumbs, eggs, Worcestershire sauce, cheese, salt, and pepper. Mix thoroughly with a fork until evenly distributed.
- Burrito Rolling: Divide meat mixture into four portions. Place each portion on a flour tortilla near the edge, shaping into a compact loaf. Fold tortilla ends and sides to create a tight roll, ensuring seam faces downward.
- Initial Baking Prep: Arrange burritos seam-side down on prepared baking sheet. Brush melted butter over burritos to enhance flavor and promote browning.
- Baking Process: Bake for 25-30 minutes until internal temperature reaches 165°F (74°C). Midway through cooking, cover with foil if browning too quickly.
- Topping Preparation: While burritos bake, heat olive oil and butter in a skillet over medium-low heat. Sauté onions until soft and golden brown, stirring frequently.
- Final Topping: Add avocado chunks to skillet, season lightly with salt and pepper. Warm for two minutes.
- Serving Preparation: Remove burritos from oven and rest for 5 minutes. Slice each burrito into 1-inch rounds using a serrated knife.
- Plating: Arrange burrito slices on serving plates. Top with sautéed onion-avocado mixture, garnish with fresh chopped herbs and a dollop of sour cream.
Notes
- Meat Selection Tip: Choose lean ground sirloin with 85-90% meat content for best texture and reduced greasiness.
- Tortilla Wrapping Technique: Fold tortillas tightly to prevent meat mixture from leaking during baking, creating a sealed compact burrito.
- Temperature Precision: Use a meat thermometer to ensure internal temperature reaches exactly 165°F for food safety and perfect doneness.
- Flavor Boost Hack: Crush tortilla chips finely to add extra crunch and enhance the Tex-Mex flavor profile throughout the meatloaf mixture.
