Ingredients

Scale

Pastry Ingredients:

  • 1 package (17.3 ounces / 490 grams, 2 sheets) frozen puff pastry, defrosted
  • 12 tablespoons (1 ½ sticks / 170 grams) unsalted butter, at room temperature
  • 2 tablespoons (30 milliliters) unsalted butter, melted and cooled

Filling Ingredients:

  • ⅔ cup (135 grams) light brown sugar, lightly packed
  • ⅓ cup (70 grams) light brown sugar, lightly packed
  • ½ cup (60 grams) pecans, chopped into large pieces
  • 3 teaspoons ground cinnamon
  • 1 cup (150 grams) raisins

Frosting Ingredients:

  • 4 ounces (115 grams) cream cheese, softened
  • ¼ cup (60 grams) unsalted butter, softened
  • 1 cup (120 grams) powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Heat the oven to 400 degrees Fahrenheit (204 degrees Celsius). Prepare a 12-cup standard muffin tin and place it on a baking sheet lined with parchment paper.
  2. Cream 12 tablespoons (170 grams) of butter with 1/3 cup (67 grams) of brown sugar using an electric mixer. Distribute one tablespoon of this mixture into each muffin cavity. Sprinkle pecans evenly across the butter and sugar base.
  3. Dust a clean work surface with flour. Gently unfold a sheet of puff pastry and brush the entire surface with melted butter. Leave a 1-inch border around the edges, then generously sprinkle with 1/3 cup (67 grams) of brown sugar, 1 1/2 teaspoons of ground cinnamon, and 1/2 cup (75 grams) of raisins.
  4. Carefully roll the pastry from the closest edge, creating a tight, compact cylinder. Trim approximately 1/2-inch from both ends of the roll. Slice the roll into six equal portions, positioning each piece spiral-side upward in six muffin cavities. Repeat the entire process with the second puff pastry sheet.
  5. Bake the pastry rolls for 30 minutes, or until they achieve a golden to dark brown color and feel firm when touched. Remove from the oven and let them rest for 5 minutes. Carefully invert the rolls onto the parchment-lined baking sheet and allow them to cool completely.
  6. Prepare the cream cheese frosting by beating 4 ounces (113 grams) of softened cream cheese with 1/4 cup (57 grams) of unsalted butter until smooth and creamy. Gradually incorporate 1 cup (120 grams) of powdered sugar, mixing continuously. Finish by stirring in 1/2 teaspoon of vanilla extract until the frosting reaches a silky consistency.
  7. Once the cinnamon rolls have cooled, generously drizzle the cream cheese frosting over the top, ensuring each roll is beautifully coated.

Notes

  • Swap traditional time-consuming dough for foolproof puff pastry, transforming complex baking into a quick morning delight.
  • Refrigerate overnight rolls before baking to develop deeper flavors and simplify morning breakfast preparation.
  • Muffin tins guarantee perfectly caramelized edges and uniform golden-brown tops for professional-looking pastries.
  • Cream cheese frosting adds luxurious tanginess that beautifully contrasts the sweet cinnamon-sugar filling.
  • Toasted pecans introduce delightful crunch and nutty depth, elevating these rolls from ordinary to extraordinary.
