Ingredients

Scale

Proteins:

  • 1 pound (454 grams) sweet Italian sausage, cut into links
  • 1 pound (454 grams) hot Italian sausage, cut into links

Vegetables and Herbs:

  • 2 large yellow onions, cut in ½-inch-wide wedges through the core
  • 2 large Holland red bell peppers, cored, seeded, and cut in ½-inch strips
  • 2 large Holland orange bell peppers, cored, seeded, and cut in ½-inch strips
  • 2 large poblano peppers, seeded and cut in ¼-inch strips
  • 1 medium fennel bulb, halved, cored, and sliced crosswise ¼ inch thick
  • 2 tablespoons (30 milliliters) minced garlic (6 cloves)
  • 1 pint (473 milliliters) red cherry tomatoes
  • ½ cup (22 grams) julienned fresh basil leaves

Seasonings and Additional Ingredients:

  • 1 teaspoon dried oregano, crushed in your hands
  • Kosher salt
  • Freshly ground black pepper
  • Good olive oil
  • ⅓ cup (79 milliliters) dry white wine, such as Pinot Grigio
  • Freshly grated Italian Parmesan cheese, for serving

Instructions

  1. Warm the oven to 400°F (200°C) and position two racks at equal distances inside the oven.
  2. In a spacious 14 × 18-inch shallow roasting vessel, amalgamate sliced onions, diced red and orange bell peppers, chopped poblano peppers, sliced fennel, minced garlic, dried oregano, salt, and ground black pepper. Drizzle ¼ cup olive oil and thoroughly blend, ensuring vegetables are evenly coated without overcrowding the pan.
  3. On a separate baking sheet, coat sausages with olive oil, arranging them in a single, uncrowded layer.
  4. Slide both pans into the preheated oven and roast for 20 minutes, allowing vegetables to caramelize and sausages to develop a golden exterior.
  5. After initial roasting, gently stir the vegetable mixture and transfer sausages into the roasting pan. Incorporate whole cherry tomatoes and pour in white wine. Continue roasting for an additional 25 to 30 minutes, periodically rotating sausages to achieve uniform browning.
  6. Extract from the oven and let rest momentarily. Scatter fresh basil leaves over the dish, toss gently, and adjust seasoning if needed. Present immediately, accompanied by freshly grated Parmesan cheese for guests to garnish as desired.

Notes

  • Ensure even caramelization by spreading vegetables in a single layer, preventing steaming and promoting golden-brown edges.
  • Rotate sausages midway through cooking to guarantee uniform browning and appetizing appearance.
  • Preserve basil’s vibrant flavor by adding fresh leaves just moments before serving the dish.
  • Sample the roasted mixture and fine-tune salt and pepper levels to create a perfectly balanced taste profile.
  • Verify vegetable tenderness and rich caramelization before presenting the final, mouthwatering meal.
