  • 14 Sliced Green Jalapeños (from a jar)
  • 1 Can (400 grams / 14 ounces) Plum Tomatoes

Seasonings and Condiments:

  • Olive Oil
  • Sea Salt
  • Black Pepper
  • 1 Tablespoon Red Wine Vinegar
  • 4 Tablespoons Soured Cream

Instructions

  1. Preheat the oven to 220°C (428°F) and prepare the vegetables by peeling the red onion into wedges and chopping the red peppers into 3-centimeter (1.2-inch) chunks. Coat the vegetables with 1 tablespoon (15 milliliters) of olive oil in a baking tray.
  2. Roast the prepared vegetables in the preheated oven for approximately 15 minutes until they begin to soften and caramelize.
  3. While the vegetables are roasting, finely chop the jalapeños and coriander stalks, reserving the coriander leaves for garnishing. Partially drain the black beans.
  4. In a large mixing bowl, combine the ground beef, half of the drained black beans, chopped jalapeños, and coriander stalks. Season with salt and black pepper. Using clean hands, thoroughly mix the ingredients and shape into a compact meatloaf.
  5. Carefully remove the roasting tray from the oven and center the meatloaf among the partially roasted vegetables. Return the tray to the oven and continue cooking for an additional 15 minutes.
  6. After 15 minutes, remove the tray and drizzle 1 tablespoon (15 milliliters) of red wine vinegar around the meatloaf. Add the remaining black beans and plum tomatoes, gently stirring to distribute the ingredients around the meat.
  7. Return the tray to the oven for a final 15-minute cooking period, ensuring the meatloaf turns golden brown and reaches full internal doneness.
  8. Once cooked, remove from the oven and let rest for a few minutes. Garnish with dollops of soured cream and sprinkle the reserved coriander leaves over the top before serving.
