Description

Jamie Oliver’s white bean dip brings Mediterranean magic to your table with minimal effort. Creamy cannellini beans blend seamlessly with garlic, herbs, and olive oil, creating a luxurious spread perfect for gathering friends around delicious shared moments.

Ingredients

Scale

Main Ingredients:

  • 1 ½ cups (360 ml) cannellini beans, cooked, drained, and rinsed
  • 2 tablespoons (30 ml) olive oil
  • 1 small garlic clove

Herb and Seasoning Ingredients:

  • 2 tablespoons (30 ml) fresh basil, torn
  • 2 teaspoons (10 ml) fresh rosemary
  • ½ teaspoon lemon peel (zest)
  • ½ teaspoon salt
  • Black pepper, freshly ground

Liquid Ingredients:

  • 2 tablespoons (30 ml) lemon juice
  • 2 to 4 tablespoons (3060 ml) water (only if needed)

Instructions

  1. Combine cannellini beans, extra virgin olive oil, freshly squeezed lemon juice, finely grated lemon zest, minced garlic, kosher salt, and freshly ground black pepper in a food processor.
  2. Pulse the ingredients until they form a coarse mixture, scraping down the sides of the processor bowl to ensure even blending.
  3. With the processor running, gradually stream in cold water (59 milliliters or 2 fluid ounces) to create a smooth, creamy consistency.
  4. Add freshly chopped basil and rosemary leaves to the mixture, processing for an additional 15-20 seconds to incorporate the herbs evenly.
  5. Pause the processor and taste the dip, adjusting seasoning with additional salt, black pepper, or lemon juice as needed to balance the flavors.
  6. Transfer the creamy cannellini bean dip to a serving bowl, using a spatula to scrape all the mixture from the processor.
  7. Garnish with a drizzle of olive oil and a sprinkle of fresh herbs if desired, and serve immediately with crisp vegetable crudités, toasted pita chips, or artisan crackers.
